Quinoa Burgers

Ingredients:

  • 1 cup grated zucchini
  • 2 cups mashed potatoes
  • 1 cup cooked carrots, diced
  • 1 cup cooked quinoa
  • ½ onion, grated
  • Salt & pepper
  • 2 tablespoons olive oil
  • Breadcrumbs

Instructions:
Place all ingredients in a bowl and knead until well combined. Shape the mixture into patties, brush them with olive oil, and coat them in breadcrumbs. Bake the patties in a preheated oven for about 15 minutes.
