Quinoa Meatballs

Ingredients:

  • 1 cup quinoa + 2 tablespoons (for the broth)
  • 400g ground beef (as lean as possible)
  • 300g stale bread
  • 1 teaspoon cumin
  • ½ teaspoon dried coriander
  • 2 eggs
  • ¼ cup parsley
  • Juice from 1 lemon
  • 4 tablespoons olive oil
  • Salt and pepper

Instructions:
In a bowl, combine the ground beef, stale bread (crumbled in a food processor), quinoa, finely chopped onion, mint, 1 egg, salt, pepper, and 2 tablespoons of olive oil. Knead the mixture and shape into round meatballs. In a pot, bring 1 ½ liters of water to a boil with a pinch of salt and the remaining olive oil.
Add the meatballs to the boiling water and continue to simmer for about 15 minutes. In a separate bowl, whisk the remaining egg thoroughly. Add the lemon juice and gradually incorporate some hot broth from the pot, whisking continuously. Once the egg mixture is warm, slowly pour it into the pot while stirring constantly. Simmer for an additional 3-4 minutes and remove from heat.
